I did it! I made scotch eggs! They have just come out of the frier and are currently cooling down. They look just right! I used 600 grams of pork mince, mixed that with some dried thyme, dried sage, salt, black pepper and frozen parsley. Wrapped that around the eggs, rolled them in a lightly beaten egg and some breadcrums. I made two proper scotch eggs and eight partysize ones (with chopped egg in the center). I can hardly wait for them to cool down so I can try them!

Hmmm...I've not heard of using chopped egg...that's an interesting twist! I've made mine with beef sausage, pork sausage, ground pork, and a mixture of beef & pork. I've also varied using dried breadcrumbs vs. crackers vs. fresh breadcrumbs... mine always turn out well (my husband certainly ain't-a-complainin'!) Congrats on your success! Maybe now you'll make 'em more often!  ~Eri

I've made mine with beef sausage, pork sausage, ground pork, and a mixture of beef & pork. I've also varied using dried breadcrumbs vs. crackers vs. fresh breadcrumbs... mine always turn out well (my husband certainly ain't-a-complainin'!) Congrats on your success! Next time I think i might use a bit of beef mix in the sausagemeatmix though. They were delicious though (and soon we'll have eaten all of them already)

I've been following this thread, but I never saw a recipe. Did I miss it? If so, will you please re-post or send it to my address. I'd never heard of these, but the ingredients seem to be things I am familiar with and I'd love to try them. Elaine For party size ones. about half a kilo of pork mince 1/2 dl chopped parsley, frozen 1/2 tsp. dried sage 1/8 tsp. ground thyme 1/2 tsp. salt Pepper to taste, freshly ground 2 hard-boiled eggs, peeled and chopped 1 egg, slightly beaten 1 c. dry bread crumbs Oil for frying Mix pork with salt, pepper, parsley, sage and thyme. Shape into 12 flat patties and wrap around about a teaspoon of chopped egg, covering egg completely. Then roll in beaten eggs and cover with bread crumbs. Heat fat or oil to 375 degrees and fry eggs for about 5 minutes, or until sausage is cooked and eggs are nicely browned. Serve hot or cold. ( I prefer them cold)
