They awarded one grand prize and five honorable mentions. Mine was one of the honorables. Here it is: Chorizo Stuffed Red Peppers 1 c orzo pasta olive oil for sauteing 1lb chorizo sausage, loose 1 medium onion, diced 1 10oz pack frozen peas*, thawed 1 8oz bottle taco saue 6 red bell peppers Cook the orzo just al dente, drain, set aside. Heat oil in a pan and lightmy brown and crumble the chorizo with the onion. In a large bowl, combine the chorizo, orzo, peas, and 1/2 cup of taco sauce, mix well. Slice the tops off the red peppers, remove ribs and inner seeds. Fill each one with the mixture, and spread a dollop of taco sauce across the top. Bake covered in a 350o oven 30 minutes or until soft. *I actually like to use a package of okra instead of the peas, but my wife thought it would turn people off :| You could also substitute rice for the pasta. Oh BTW, the grand prize winner was a fancy apple pie :/ Michael K.
