I'm typing my recipes into MasterCook (a software program), and making a cookbook of them for my daughter. It occurred to me that this one is a very frugal recipe, so here it is - it's also very good. [snip] Sounds great! I like recipes where the amounts are flexible, and it sounds like this could be easily tailored to individual tastes with more of whatever or any spices that one prefers. Thanks, Pat. Ariane

It occurred to me that this one is a very frugal recipe, so here it is - it's also very good. This is a VERY useful recipe, you can feed lots and lots of people with one chicken if need be. Just add more potatoes, onions, and carrots. With a salad, it's a complete meal, although if you want a green vegetable too, I'd think peas would go well with it. (I'm not Ukrainian, I don't know if this is genuinely a Ukrainian dish, and I can't remember where I got the recipe - it was many years ago.) Ukrainian Chicken Amount Measure Ingredient

Correction: sorry. You can sprinkle some thyme (or other herb of your choice) on the chicken too. I use thyme. see where it says to use cooked chicken or anything. This recipe doesn't seem to make a provision for draining the meat. Then, it calls for added butter? I'm confused. You sort of NEED to drain it. The fat from the entire chicken would render the dish indigestible. This is strictly from the experience of serving chicken soup without skimming off the fat. It went down fine, but did not stay there. It shouldnt be greasy if you are using skinless boneless chicken breast and maybe lowfat chicken broth. Heres another recipe for an easy chicken dinner..... 4 boneless skinless chicken breast 4-6 Potatoes, peeled and cubed can of green beans stick of margarine package of good seasons dry Italian dressing Place chicken breasts in center of large casserole baking dish. Place the potatoes on one side of the chicken and the green beans on the other side. melt margarine and mix with the dry dressing. Drizzle the margarine/dressing mixture over the entire dish. cover with foil and bake for about45-60 minutes at 350 degrees. Remove foil the last 10-15 minutes of baking to lightly brown. It is fast, easy and delicious.......Will feed at least 4 and occasionally I will use 2 cans of green beans.
