Can anybody share with me their favorite new England recipe  for cooking fiddlehead ferns? I want to try this spring delicacy the right way, so that I can find out what they are really like. Thanks in advance- Liz

Can anybody share with me their favorite new England recipe  for cooking fiddlehead ferns? I want to try this spring delicacy the right way, so that I can find out what they are really like. Thanks in advance- Liz This is not much of a recipe...   Fiddlehead season is so short and they are so good, that I can't bear doing anything with them. I run them under cold water, rinse and toss them (still wet)  in a m,edium-high saute pan  with melted butter, cover for 2 minutes, then remove cover and saute until water is gone.  A squirt of lemon juice, some good coarse sea salt and a hot plate.  They are great with toast.

Can you clarify something for me? Is a fiddlehead fern the fiddlehead of any fern you happen to encounter in the woods? Or is it a particular kind of fern? And, if the latter, how do you identify it that early in the season?

Thanks in advance- Liz You don't really have to do much of anything to them.  If you want to eat them plain, cook them in the microwave or saute' them in butter, pretty much like you would any vegetable.  I sometimes put them in a stir-fried random. -Sandra

Thanks in advance- Liz Saute the ferns in New England butter.   After a few minutes, toss in a handful of New England pignoli.   When the pignoli begin to change color, you're done.  Remove everything from the pan quickly.  You don't want to over-cook the nuts. The nuts add a texture.  Not to mention that oil-rich flavor.  Mmm,   butter & pine nuts.  And fiddlehead fern.

Thanks in advance- Liz Spring delicacy?  I always thought that people ate them only because they were sick of half-rotten potatoes from the root cellar, and in danger of scurvy from a long winter of preserved food. Do they actually taste good?   Never tried them, but they look cool on the cooking shows on TV. Probably taste like other greens, but not as bitter as dandelions, which is a somewhat acquired taste, but one that for me is a comfort food (cooked/steamed then served with olive oil and vinegar). Lots of dandelions ready for harvest on lawns right now.   Chuck Demas
